First off…let me tell you a little bit about CDM Mind & Body!

CDM Mind & Body is a platform for all things health…and you all KNOW how much I love my health and fitness!  They are your resource for health tips, motivation, information, how-to and much more…and I’ll be honest…who DOESN’T need all that stuff in their life?!  That’s right…we all do!!

And we can all thank Cynthia Ringo for making this all happen!  This St. Louis based group was formed in 2010 by Cynthia and was sponsored by Christ Deliverance Ministry.  After becoming a full-time caregiver for her husband (who had suffered a stroke and then developed vascular dementia as a result of that stroke), maintaining a healthy lifestyle became SUPER important to her because she knew if she didn’t care for herself…she wouldn’t be able to care for him.  So…with about 15 other women from their church, she started her journey to become her healthiest while inspiring others.

Guess what happened!

That small group of women (age span from 21 to 65 including two breast cancer survivors) lost over 600 pounds collectively and counting….WOW!!!!!!!

Since then…the original group of women along with others in the community decided to take back their lives and have grown this idea into a day-long health and fitness event sponsored by CDM (Christ Deliverance Ministry – a faith-based, non-profit organization dedicated to serving the St. Louis community).

This year, on May 28th,  come and enjoy the day at with this inspirational group!  There will be something for everyone!  The event takes place at Cardinal Ritter College Prep High School in Midtown St. Louis (701 North Spring Avenue, St. Louis, MO) and includes a 5K race (1st place can snag a $500 overall prize), a fitness challenge, a healthy living seminar and many lifestyle vendors.

Come join me for The Color Run again this year!!  If you know me…then you know that I’m a HUGE fan of The Color Run and have run in many over the years!  This race NEVER lets me down and always provides me with an AMAZING TIME!!!

Let’s start with what we already know about The Color Run

  • It’s a unique paint race that celebrates healthiness, happiness and individuality (Yes…you can wear that unicorn outfit if you want!)
  • It is now considered the single largest event series in the world since their debut – they hosted more than 300 events in 50+ countries in 2014. (The Color Run thanks each and every one of you that made that possible!)

This year though…we are going to SHINE!!!  The Color Run is introducing a few new FUN things this year to help us do just that!

Healthy Twist on Halloween + Giveaway!

Oh Halloween treats…oh how you tempt me with your yummy goodness and your sticky sweetness!!  Why?!  Why do you do it??!!

Does the thought of this holiday make you feel the same way?  Halloween has been and probably always will be, a huge battle I fight against each year.  I LOVE CANDY AND SWEETS!!….and I’m not afraid to admit it! 🙂

I’m also not afraid to admit that I rummage through the kiddos candy piles after they fall asleep on Halloween night…Hey…don’t judge 🙂

However, this fun holiday doesn’t always have to be unhealthy.  There are so many options out there for making healthier choices on the Halloween treats that you make.

Yummy goodness + healthy choices = A happy girl!

A few months ago, I did a review for Kretschmer Wheat Germ!  This little nutrient-rich powerhouse has truly become a staple in my household and I use it almost daily in my smoothies as well as a breading for chicken, fish, etc.  I love this product!!!!!

So without further ado, I’m very excited to share these new recipes with you that will make some yummy Halloween treats that won’t make you feel completely guilty 🙂  **Recipes courtesy of Kretschmer Wheat Germ

Caramel Apples with Wheat Germ

Apple

  • Use the handy caramel apple kit found in the produce department, near the (you guessed it) apples. It is microwavable and heats up to just the right consistency (apple sticks are included).
  • Then mix about 1/4 cup wheat germ (Kretschmer Original or Honey Crunch) with about 1/2 cup finely crumbled chocolate-toffee pieces for six apples.
  • As soon as you’ve swirled the apples coat them immediately with the wheat germ-chocolate toffee bar mixture. Let the apples cool for about an hour.
  • While still a definite indulgence, these sprinkled caramel apples taste incredible and the crumbly topping provides a welcome layer of goodness.

Dark Chocolate Truffles with Wheat Germ

  • 8 ounces good quality bittersweet or semi sweet chocolate, chopped into small pieces 1/2 cup heavy cream
  • 3 tablespoons Kretschmer Original Toasted Wheat Germ (or Kretschmer Honey Crunch Wheat Germ)
  • Line baking sheet with parchment or wax paper.
  • Place chopped chocolate in medium bowl.
  • Heat cream to gentle boil in small heavy-duty saucepan. Remove from heat. Add chocolate. Stir until mixture is smooth and chocolate is melted. Refrigerate 25 to 30 minutes or until mixture is thick enough to form into balls.
  • Using very small ice cream scoop or melon baller, drop rounds of chocolate onto cookie sheet. Shape or roll into balls; coat with wheat germ. (Note: If chocolate becomes too soft to shape, return it to refrigerator until it is cold enough to manage.)
  • Store in airtight container in refrigerator. Remove at least 15 minutes before serving to bring to room temperature.

Holiday Recap, Half-Marathon Training & Yummy Food

I’m going to play a little catch up with you all…I’ve not really posted much lately but it has been a little crazy in my neck of the woods and I just haven’t had the chance to really get on here and blog. So here we go….

This past weekend, I went to visit with my mom and step dad (and Sadie & Skeeter – their pups) for the holiday! Now first let me say, that I do not get to go to my mom’s as often as I should (it’s really only about an hour and a half away but life is always getting in the way), but when we go, it is always so relaxing! She literally lives practically in the middle of no-where 🙂 A little town by the name of Old Mines, MO. I grew up going to the church here and have many fond memories of the Fall Festivals there…FUN TIMES!!

We spent most of the our weekend just chillin’ on the porch watching the day go by…playin’ with the puppies…finding treasures in the old barn…eating some yummy food…and shooting off a few fireworks. Oh…and we can’t forget swatting those pesky mosquitoes…they sure love me and my kiddos for some reason! We all look like we have the chicken pox’s…ugh!!  Check out the amazing views from my mom’s front porch…BEAUTIFUL!!

The hubby and I also snuck off to explore one of the old cemeteries that is down the road from my mom’s at St. Joachim Catholic Church (the one I went to as a child). There are three different cemeteries right in this same area but I love this one the most!  This cemetery is so interesting because there is so much history attached to it. Some dating back to the early 1800’s…some you couldn’t even read…some were just steel crosses with no writing…one young man who died in an explosion on a steamer ship…and some are even unmarked because the markers are no longer there. Check out some of what we found!

Now, when I go to my mom’s, I usually have to bring some meals with me since I eat so much differently (my friends and family say that I eat twigs, berries & bark….lol) than the rest of my family (I’m a health nut and the rest of them are not…plus I do the whole dairy-free as much as I can thing…and the no red meat thing). We were planning on having a BBQ on Saturday so I decided to make lots of little side dishes that would be me-friendly 🙂

I made some amazing Quinoa Fruit Salad that I found at Two Peas & Their Pod. The only thing I left out (I admit it…I forgot to buy it…ugh) was the fresh mint but it was awesome all the same. It was even pretty tasty the next day when I scarfed delicately ate scarfed some more down. I highly recommend making this sometime this summer when the fruit is in season.

I also made some yummy Tomato Kick Bean Dip from my pal Linz at It’s Linz. The only thing I changed was that I used chickpeas instead of great northern beans but only because that is what I had on hand. It was so light and yummy! Ate it with veggies…ate it with pita chips…ate it by the spoonful (okay…just kidding on that last one…or am I?) Even my mom ended up liking it!

I also made another dish that I had torn out of a magazine at some point (not even sure which but probably Home & Garden). Here is the recipe if you would like to try it out!

Creamy Cabbage & Sweet Corn Slaw
Prep Time: 10 min
Total Time: 20 min

Ingredients
2 tbsp sour cream
2 tbsp lime juice
1/8 tsp cayenne pepper
¼ tsp salt
1 scallion (finely sliced)
1/4 small head cabbage (I cheated and used the already shredded bagged kind).
¼ cup corn kernels (I used a fresh ear of corn that I had baked in the oven)
2 tbsp fresh cilantro (optional but I highly recommend)

In a medium bowl, whisk together the sour cream, lime juice, cayenne pepper and salt. Add in the cabbage and the corn and toss to coat. Let sit, tossing occasionally, for 10 minutes. Fold in the scallion and the cilantro. EAT and ENJOY!

It really turned out super good! I was pleasantly surprised for sure. Thinking I might make this and add it to a salad next time…hmmmm…oh so many options!!

My weekend ended up being a really great time! Love seeing my mom and visiting with her…I miss her dearly and wish I could see her more!  Although, what would my luck be if I didn’t have a little bit of bad luck….thankfully it waited till we were about one minute from home before it blew up!

I finally am making the leap into the Half-Marathon world! I begin official training for the MO Cowbell Half-Marathon on October 6th starting on Monday!! This will be my first race over 10K and I’m super excited! I’ve chickened out every year but I’m bound and determined to join the ranks with the rest of you that have a Half under your belt. This week, I’ve kept my mileage the same as what it will be next week and it’s going great so far! We shall see how it goes for the next 12 weeks 😉

Memorial Weekend: Injinji, Sweat Pink, Fossils & More

First and foremost, I would like to say thank you to all our servicemen, past and present. Your dedication and sacrifice are greatly appreciated.

** NOTE:  I totally had this whole post typed up and then something horrible happened….my computer went on the fritz and I lost everything…even the draft that I had saved…grrrrr…Instead of retyping it right then and there…I pouted a little and then decided to just retype it out today! One day late is better than not at all…right?! 

Our weekend started off with some last-minute BBQ plans at one of our friends’ garage. My daughter was with her dad this weekend so the hubby and I just hung out at the garage and let our son run crazy for the evening. He absolutely loves it there as he can play in the dirt with his monster trucks, chase Max (the dog) around, play on the crawlin’ rigs like he is driving them. We even caught him working on one of the Jeeps out there…What a great helper!

20130524_213500Saturday was spent lounging in bed late and then lunch with my two favorite men (hubby & son) From there, we headed home so that I could sneak a run in. Decided to take a different route this time and am now pretty sure that it is my favorite route. On this run, I decided to try out the Injinji socks that I received in my RunnerBox. I will just say, that I truly didn’t know about these socks because they are “toe socks”….and I’m in no way a fan of the “toe sock”. They drive me nuts usually. I tried them any way though, because they are supposed to help with blisters (which I get all the time).

I want to go on record now by saying that I’m a true fan of the Injinji socks!! They felt amazing!! Once I had my shoes on, they felt no different from any other socks. They are super comfy and super thin….like wearing nothing at all! Will for sure be purchasing more of these bad boys! I also had on my new and AWESOME Sweat Pink laces!! They are super cute and of course love that they match my shoes! And I must say, that the combination of those socks and those laces must have made me feet magic because I ended up getting a PR on a 5K during this run! Jackpot!!!

Sunday, found us at August A. Busch Memorial Conservation Area where some of my hubbys’ friends were having an RC Car Competition near Lake 35. There are lots of rocks and beautiful scenery so my son and I set off to do a little exploring.

We ended up finding some amazing fossils (Man….I want to be an archeologist so bad when I grow up). These fossils were awesome to see…I just wish I knew what it was. I know some of them are probably from fish but I’m not sure that they even exist anymore….the area we found them was originally covered by tons of rock that was blasted out when the lakes were made. Check them out!

Kaleb conned his dad into letting him play with the RC Car for a little bit and had the best time! He had the hardest time though staying out of the water and eventually took a slide down an area causing him to be soaked…didn’t even faze him…he just kept on going! Thankfully, it was super warm and he dried pretty quickly…he was only left with a huge mud mark on his britches.

IMG_20130527_025439The rest of the beautiful day we had, was spent playing at the park. We did some climbing on the “spider web”, some climbing on the rock wall, a little see-saw action and of course some walking with our dog Franklin. Ended up staying there until dark…we were all exhausted for sure!

On Monday, we spent the day trying to keep dry mostly. My husband has a Suzuki Samauri and he insists on taking the doors off every chance he gets. I told him it was supposed to rain, he said 20% chance. We decided to head to one of my Top 10 places to eat….Qdoba…where I ordered their amazing Chicken Mango Salad. We sit down to eat and then the downpour started….I just looked at my husband and said, “Well, we can take our time eating!” Thankfully the rain didn’t last long and MY seat didn’t get too wet…I can’t say the same for the hubby’s 😉 After lunch, we headed to a car show! We go to these any chance we can and this one turned out to be pretty cool! Saw some pretty neat cars and they also had tons of antiques to look at, which I love! Here is a little of what he found…

 

And you can’t forget the amazing snow cone I got (Tiger’s Blood and Pina Colada)!!! Yummy!!!

After that, we just headed home and hung around the house for the rest of the evening because of the off and on raining all day. It did finally stop raining that evening in enough time to let me get my run in! I decided to participate in the Runner’s World Summer Run Streak which is where From Memorial Day to Independence Day, you run at least one mile, every day.

So that’s that for the weekend! It was fun-filled for sure….not set in stone plans….just doing what we wanted to do whenever we wanted! Just the way I like my weekends!

Birthday Recap :)

I started out my birthday hanging out with my sweet hubby and some friends at our hometown “Cheers” a.k.a. Duchesne Bar & Grill a.k.a. The DBG a.k.a. my previous employer ;). Yes….I’m a veteran bartender/server!  This place truly is filled with some cool people who I dearly miss working with every weekend.

That’s me….with my gorgeous necklace that my amazing friend Chris got me for my birthday….she has great taste!  We didn’t stay long..a few hours….I had some girly drinks and some yummy food….bar food at it’s best!  Fried and totally not good for me but yummy nonetheless 🙂 (no incriminating pictures here folks….its like those fried mushrooms never happened)

From there, me and the hubby went home….snuggled down in bed and watched Pitch Perfect.  Hilarious movie!  Loved it!  Actually ended up watching it no less than 5 times over the weekend.

Saturday morning we slept in…and then Sean (the hubby), Kaleb (the son) and I went to our favorite breakfast place.  You just gotta love Gingham’s.  I love that they remember us when we go in there to eat….makes ya feel a little important ;). Here is a pic of me and Kaleb cheesin’ for the camera.  He is such a cutie!

I started with coffee and then got the Breakfast Wrap which for me ended up being a tortilla with two scrambled eggs, bacon, spinach, swiss cheese and salsa.  I also had a fruit cup and some cinnamon toast….man…I’m full just typing all that out!

After breakfast but before lunch, I was able to sneak in a run (3.15 miles)…I went to the gym this time because of this stinky rain….blah…so sick of it and ready for sunshine and warmth.

From there, we just kind of hung around the house until lunch time when it was Round 2 of great food!  We of course had to have Mexican for my birthday but I didn’t want to brave the crowds on Sunday.  We ended up at one of my most favorite Mexican restaurant.  Dos Primos is amazing and as usual I had the best meal!  I decided on the Shrimp Taco Salad with avocado and green sauce added.  Plus I had a bunch of chips and salsa…that’s a given :). No pictures….sorry….forgot my phone in the car ** gasp**

Sunday found me sleeping in again (8:30….wow!).  I spent the remainder of my day hanging out with the family and doing a little shopping at the mall.  I got some really cute stuff 😉 I also went to Starbucks and got my free birthday drink #jackpot!  I always get the same thing which is the Caramel Macchiato and I also got the Salted Caramel cake pop…it was all De-lish!

I finished the evening with this Strawberry cupcake that my daughter helped make….she is just too sweet!  She was very proud to say the least!

So there was my birthday weekend in a nutshell….too much food for sure….still stuffed today and ready to get back to my normal eating habits.

Let’s just say that I am more than overjoyed that Spring has kicked winter to the curb….just sayin’! I can deal with the rain as long as I get those warmer temps. I am one of those people that is cold ALL the time so I love me some warm days 🙂

It just makes everything so much easier….running is easier….getting the kiddos out of the house is easier….heck….even getting dressed is easier!

So in honor of this amazing day we got today, my family and I spent as much time as possible outside….well except for that small nap we made the kiddos take….believe me…it was for the own good! They woke up at the crack of dawn….

First off though, we had an amazing lunch at Qdoba! Love that place! I didn’t take pics but I had an amazing Grilled Chicken Taco Salad with three different salsas…and I snagged some of my hubbys chips and queso. It was yummy as usual!

From there came the quick nap followed by a trip to the neighborhood park for running (me)…bike riding (the kiddos & hubby). I ended up only doing a mile because I really wanted to go enjoy watching the kiddos ride their bikes. It was a great short run though so that’s what counts! I also snuck some post run reading in with my new Runners World magazine I picked up today. I don’It know about you but I love getting a new magazine….any magazine :). I also brought last months edition of Women’s Running. They are my two favorite running magazines right now.
