Ingredients are always an important factor for me when it comes to nutritional bars.  We all know that there are some out that are wolves in sheep clothing just gearing up to fill our bodies with ingredients that are anything but nutritional.  Not this company!!!

AMRAP creates food that is 100% Paleo, gluten-free, GMO-free, dairy-free, and unprocessed. Let’s just say that I was stoked about ALL the flavors because they all sounded AMAZING!!  I tried the Cashew & Vanilla first.  After one of my training runs, I ate it to refuel and it totally hit the spot!  Filled me up without making my stomach feel super full and heavy!  And the taste?!  Can you say DELIGHTFUL!!  It wasn’t too sweet and had a little bit of a salty taste from the cashews.  I even let my kiddos try a tiny bite of it and they loved it also.Cashew Vanilla

Next up, I gobbled up the Fig & Cacao prior to my workout one day.  I had weights and core that day and used this to prep me for the energy I was about to burn!   The flavor of this one was just as amazing.  It was a bit rich so I ate half before my workout and the other half after.Fig Cacao

Healthy Twist on Halloween + Giveaway!

Oh Halloween treats…oh how you tempt me with your yummy goodness and your sticky sweetness!!  Why?!  Why do you do it??!!


Does the thought of this holiday make you feel the same way?  Halloween has been and probably always will be, a huge battle I fight against each year.  I LOVE CANDY AND SWEETS!!….and I’m not afraid to admit it! 🙂


I’m also not afraid to admit that I rummage through the kiddos candy piles after they fall asleep on Halloween night…Hey…don’t judge 🙂

However, this fun holiday doesn’t always have to be unhealthy.  There are so many options out there for making healthier choices on the Halloween treats that you make.

Yummy goodness + healthy choices = A happy girl!

A few months ago, I did a review for Kretschmer Wheat Germ!  This little nutrient-rich powerhouse has truly become a staple in my household and I use it almost daily in my smoothies as well as a breading for chicken, fish, etc.  I love this product!!!!!

So without further ado, I’m very excited to share these new recipes with you that will make some yummy Halloween treats that won’t make you feel completely guilty 🙂  **Recipes courtesy of Kretschmer Wheat Germ

Caramel Apples with Wheat Germ


  • Use the handy caramel apple kit found in the produce department, near the (you guessed it) apples. It is microwavable and heats up to just the right consistency (apple sticks are included).
  • Then mix about 1/4 cup wheat germ (Kretschmer Original or Honey Crunch) with about 1/2 cup finely crumbled chocolate-toffee pieces for six apples.
  • As soon as you’ve swirled the apples coat them immediately with the wheat germ-chocolate toffee bar mixture. Let the apples cool for about an hour.
  • While still a definite indulgence, these sprinkled caramel apples taste incredible and the crumbly topping provides a welcome layer of goodness.

Dark Chocolate Truffles with Wheat Germ 


  • 8 ounces good quality bittersweet or semi sweet chocolate, chopped into small pieces 1/2 cup heavy cream
  • 3 tablespoons Kretschmer Original Toasted Wheat Germ (or Kretschmer Honey Crunch Wheat Germ)
  • Line baking sheet with parchment or wax paper.
  • Place chopped chocolate in medium bowl.
  • Heat cream to gentle boil in small heavy-duty saucepan. Remove from heat. Add chocolate. Stir until mixture is smooth and chocolate is melted. Refrigerate 25 to 30 minutes or until mixture is thick enough to form into balls.
  • Using very small ice cream scoop or melon baller, drop rounds of chocolate onto cookie sheet. Shape or roll into balls; coat with wheat germ. (Note: If chocolate becomes too soft to shape, return it to refrigerator until it is cold enough to manage.)
  • Store in airtight container in refrigerator. Remove at least 15 minutes before serving to bring to room temperature.

Foodie Pen Pal: July Reveal!!


It’s Foodie Pen Pals June Reveal Day over at The Lean Green Bean!!

But before I get to my reveal…let’s do a little recap on what Foodie Pen Pal is.

First….it’s always a super FUN time!!!!! Second….here are the details! You receive a pen pal match on the 5th of each month, then you email your match to see what they love/hate (yours will do the same) and then mail out a box filled to the brim with foodie treats to your pen pal. You just have to do it by the 15th! On the last day of the month, everyone reveals what goodies they received. You get a different match each month so you are always getting an opportunity to meet new people, find new blogs and try foods that you may just not have available in your area.

So this month, I received my package from Erin!  I truly do not know how I get so lucky every month, but I always seem to get a box full of stuff I like…EVERY MONTH!!!  Have not been disappointed yet!  This month, this is what my Foodie Pen Pal box looked like….


Included was:

Saffron Road Crunchy Chickpeas – I love chickpeas!!  I make these for myself a lot but these were a lot easier and not so messy.  The flavor of these were seriously tasty and I found myself eating these by the handful.  I also threw some on a few of my salads lately also!

Hatch Green Chili Almonds – OMG!!!  So…almonds are probably one of my favorite nuts and have never tried this brand or flavor before!  Let’s just say….that they are all gone!!!  They just disappeared one evening while I was watching a movie with the hubby. 🙂

Whole Foods Veggie Chips – Veggie chips are just one of those things that just make me happy!  The have the crunch that I crave from chips but are healthy unlike most of the chips out there on the market.  I have never tried the ones from Whole Foods but will for sure be picking some of those up next time I go.  The okra and the shiitake mushrooms were my favorite!

Homemade Marshmallows – She made toasted coconut and also vanilla!  They were both amazing but I would have to say that the toasted coconut was my favorite!  They only lasted two days before I scarfed them down 🙂  Must get recipe!!!!!!  My kiddos would love these so I see myself whipping up a batch of these in the near future!

Holiday Recap, Half-Marathon Training & Yummy Food

I’m going to play a little catch up with you all…I’ve not really posted much lately but it has been a little crazy in my neck of the woods and I just haven’t had the chance to really get on here and blog. So here we go….

This past weekend, I went to visit with my mom and step dad (and Sadie & Skeeter – their pups) for the holiday! Now first let me say, that I do not get to go to my mom’s as often as I should (it’s really only about an hour and a half away but life is always getting in the way), but when we go, it is always so relaxing! She literally lives practically in the middle of no-where 🙂 A little town by the name of Old Mines, MO. I grew up going to the church here and have many fond memories of the Fall Festivals there…FUN TIMES!!

We spent most of the our weekend just chillin’ on the porch watching the day go by…playin’ with the puppies…finding treasures in the old barn…eating some yummy food…and shooting off a few fireworks. Oh…and we can’t forget swatting those pesky mosquitoes…they sure love me and my kiddos for some reason! We all look like we have the chicken pox’s…ugh!!  Check out the amazing views from my mom’s front porch…BEAUTIFUL!!


The hubby and I also snuck off to explore one of the old cemeteries that is down the road from my mom’s at St. Joachim Catholic Church (the one I went to as a child). There are three different cemeteries right in this same area but I love this one the most!  This cemetery is so interesting because there is so much history attached to it. Some dating back to the early 1800’s…some you couldn’t even read…some were just steel crosses with no writing…one young man who died in an explosion on a steamer ship…and some are even unmarked because the markers are no longer there. Check out some of what we found!

Now, when I go to my mom’s, I usually have to bring some meals with me since I eat so much differently (my friends and family say that I eat twigs, berries & bark….lol) than the rest of my family (I’m a health nut and the rest of them are not…plus I do the whole dairy-free as much as I can thing…and the no red meat thing). We were planning on having a BBQ on Saturday so I decided to make lots of little side dishes that would be me-friendly 🙂

I made some amazing Quinoa Fruit Salad that I found at Two Peas & Their Pod. The only thing I left out (I admit it…I forgot to buy it…ugh) was the fresh mint but it was awesome all the same. It was even pretty tasty the next day when I scarfed delicately ate scarfed some more down. I highly recommend making this sometime this summer when the fruit is in season.

I also made some yummy Tomato Kick Bean Dip from my pal Linz at It’s Linz. The only thing I changed was that I used chickpeas instead of great northern beans but only because that is what I had on hand. It was so light and yummy! Ate it with veggies…ate it with pita chips…ate it by the spoonful (okay…just kidding on that last one…or am I?) Even my mom ended up liking it!

I also made another dish that I had torn out of a magazine at some point (not even sure which but probably Home & Garden). Here is the recipe if you would like to try it out!

Creamy Cabbage & Sweet Corn Slaw
Prep Time: 10 min
Total Time: 20 min

2 tbsp sour cream
2 tbsp lime juice
1/8 tsp cayenne pepper
¼ tsp salt
1 scallion (finely sliced)
1/4 small head cabbage (I cheated and used the already shredded bagged kind).
¼ cup corn kernels (I used a fresh ear of corn that I had baked in the oven)
2 tbsp fresh cilantro (optional but I highly recommend)

In a medium bowl, whisk together the sour cream, lime juice, cayenne pepper and salt. Add in the cabbage and the corn and toss to coat. Let sit, tossing occasionally, for 10 minutes. Fold in the scallion and the cilantro. EAT and ENJOY!

It really turned out super good! I was pleasantly surprised for sure. Thinking I might make this and add it to a salad next time…hmmmm…oh so many options!!

My weekend ended up being a really great time! Love seeing my mom and visiting with her…I miss her dearly and wish I could see her more!  Although, what would my luck be if I didn’t have a little bit of bad luck….thankfully it waited till we were about one minute from home before it blew up!


I finally am making the leap into the Half-Marathon world! I begin official training for the MO Cowbell Half-Marathon on October 6th starting on Monday!! This will be my first race over 10K and I’m super excited! I’ve chickened out every year but I’m bound and determined to join the ranks with the rest of you that have a Half under your belt. This week, I’ve kept my mileage the same as what it will be next week and it’s going great so far! We shall see how it goes for the next 12 weeks 😉

Farmer’s Market, Running & Date Night = Amazing Weekend


I had an awesome weekend….see above…the meter doesn’t lie 🙂

It wasn’t even that I did a whole lot, but the stars aligned and my weekend was just overall fabulous!

Friday evening was just spent hanging out at home with the hubby and kiddos.  I did not feel like cooking at all after the week I had at work, so I took the easy way out and ordered pizza and toasted ravioli for them and a huge salad for me.  Okay…I snagged a piece of pizza too, but only one piece!  Trying to steer clear of all that dairy…which is hard by the way since I love cheese 🙂  Cheese just doesn’t love me…LOL.  I also got some cleaning and laundry done also (Not fun…but you know how it goes…can’t let the family go naked…or can we?!)  Oh…and I did my workout…I’ve been using this one that I found on Fitbie lately.  It’s called 27 No-Equipment Exercises You Can Do At Home.  I love it because I can do this anywhere since no equipment is needed!  Love it!!  Have been trying to do this 2-3 times a week.

Saturday morning found me up early and ready to go for a run.  I’ve decided that on the weekends, I need to get up and do my run early or it just doesn’t happen.  The day gets away from me, and then I find myself trying to fit it in at the end of the day.  Since my knee still isn’t completely 100% better, I decided to head to Frontier Park to run on the Katy Trail (it’s a softer trail than the asphalt that I’ve been running on in my neighborhood)!  Plus, I wanted to hit the Farmer’s Market that is down in that area before my run.  Two birds….One Stone sort of thing!

The Farmer’s Market was great…got some squash and green tomatoes.  Plus I also got some amazing turnips, green beans and fresh eggs from the organic farm that was there!!!  Made some of the fresh, organic eggs for my son this morning…scrambled of course…and he loved them!!!  I snagged a bite also and loved the taste of them.  Thinking I might start getting all my eggs from her…you just can’t beat Organic if you can find it 🙂

My run on Saturday turned out being great!  The weather was still great…slight breeze blowing off the river.  Started off and was feeling good.  My knee did force me to stop and walk for a bit during the run but was very happy with the 2 miles that I got in.  Check out some of the scenery from my run….Beautiful!!


Spent the rest of the day on Saturday running some errands and hanging out at the mall.  I seriously get so excited about new workout/running clothes!  I could have spent all day in the stores just running my fingers over all the pretty, bright tanks and running shorts….DROOL!!!!  UnderArmour has some seriously amazing stuff out right now…If only I was rich 😉  In the end,  I got some amazing deals at Dick’s Sporting Goods for only $50 bucks….check out the swag I scored!


Saturday night, my husband and I were able to sneak out and have a date night all by ourselves…no kids!!!  Woot woot!!  We headed down to Historic Main Street in St. Charles and found ourselves and Lewis & Clark. It was a gorgeous evening so we sat out in the outside eating area…which just so happens to be up on the 3rd floor.  We tromped up the steps (totally re-thinking the heels I wore at this point…but what the heck…my feet looked amazing) and took our seats.  I ended up with the Mahi Mahi Fish Tacos and a side salad.  Both were amazing!!  (Sorry…no pics…it was super dark out at this point and the pictures weren’t really turning out).  My hubby did capture this amazing photo from where we were sitting though.


Simply gorgeous….I seriously love this little part of town!

Sunday morning, I hopped out of bed…heading back down to Frontier Park for my run.  The weather today was not quite what it was the day before.  It was cloudy and windy and I was just hoping that the rain would hold off until I was down.  The wind coming off the river made it a little hard to run at points but overall, it was a great run!  Another 2 miles in!  Spent the rest of the day trying to avoid the rain…it just wouldn’t stop!  We ended up back at the mall because my hubby wanted to grab something he had forgotten the day before.   Ended up wasting 3 hours there mostly because it was raining so hard and we didn’t want to soaked going to the car.

By the end of the day, let’s just say that I was exhausted!  For once, I was in bed and asleep by 9:30 pm….WOO HOO!!!

Foodie Pen Pals: June Reveal Day

It’s that time again!!  Man, these months are flying by…..

This month, I was lucky enough to get my package from the one-and-only Lindsay from The Lean Green Bean!!  What a treat!!  She totally hooked me up with some amazing treats and a super cool bag as a little something extra!!  I didn’t take a picture of the bag but I will say that I absolutely love it and have been using it to carry my lunch back and forth to work.

As far as my goodies, this is what I got! (NOTE:  sorry for the lack of pictures…my phone is holding them hostage for now…I will load them as soon as they are released…LOL)

Vega Savi Seeds (Natural & Cocoa Kissed):  I have never eaten these before and to be honest, haven’t really heard of them.  But I’m sucker for trying new stuff so I ripped into these the minute I opened the box!  I tried the Natural ones first which were just plain.  They were actually really good!  Plus, it doesn’t hurt that they boast 17 times more Omega-3 per ounce than wild Sockeye salmon.  **SCORE**   They reminded me of Edamame a little.  I tried the Cocoa Kissed ones later that evening while watching a movie and relaxing in bed.  It was the perfect little snack.  I like the Cocoa Kissed ones a lot more than they plain ones but they were both really good.

Planter’s Dry Roasted Pistachios!!  Hello!!! How did she know?!  These are my absolute favorite nut!  She said she got them for me because she likes them but not their price and thought that maybe others feel the same way.  Which I do!  I love this nut but I hate how expensive they are so I hardly ever purchase them for myself, let alone a bag this size J  I’m not going to lie….I hid that bag and ate them all myself…no sharing!!  I know…I’m sooo bad!  Oh well 😉

Village Harvest Quinoa:  I truly enjoy quinoa so this came in handy.  It saved me from having to buy it one week which is always awesome!  I use quinoa for all kinds of things from adding chicken/fish and veggies to it and stir-frying, to adding it to my salads.  I love it!  Again…how did she know?!  Check out some of the other recipes you can make with this yummy grain here.

Santa Cruz Organic Peanut Butter – Creamy:  You can’t go wrong with peanut butter especially when it’s organic.  I had never tried this brand before so was excited to try something new.  It was super creamy and the taste was amazing.  My kids and I enjoyed many PB & J’s with this yummy stuff.

Mrs. Dash Extra Spicy Seasoning Blend (Salt-Free):  I’m a huge fan of seasonings and this for sure did not disappoint.  I used to not be too picky with my seasonings but since beginning my journey towards a more healthy lifestyle, I’ve started only using seasonings that don’t have a lot of weird unpronounceable ingredients.  This one is awesome because there are nothing but natural spices in it (such as: onion(s), garlic, tomato, paprika color, citric acid, orange peel, oil of lemon, Spices (black pepper, sweet chili pepper, cayenne pepper, celery seed, oregano, cumin, basil, bay, marjoram, savory, thyme, coriander, mustard, rosemary)!  And the flavor was awesome!  I love spicy stuff and this one was just right!  It went great with the tacos I made this past week.

Love Grown Simply Oats Apple Walnut Delight Granola:  WOW!!!!!  This was by far my favorite!!!  I cannot believe how good this is!  I’m not a huge fan of dried fruit but the dried apples in this granola was phenomenal!  I have been eating a handful here and there and I have a small bowl of it with my fruit in the morning.  I’m in love and sad at the same time that the bag is almost empty 😦  Going to have to go on a hunt for it 🙂


So that’s that!  I’m really glad that I found this amazing way to meet new people and try new products!  It is always super fun deciding and picking stuff out for your pen pal and it’s even more fun opening up your pen pal box when it arrives!  You can’t even begin to guess what you might get!

Review: Kretschmer Wheat Germ (The Original Super-Food)



I was approached by Kretschmer Wheat Germ to review their product and to offer some free product to one of my readers!  The lovely Sue T. was the winner of the raffle that I had and I hope she enjoys her wheat germ as much as I have!

First…let me tell you a little bit about the product!  Kretschmer Wheat Germ has been around since 1936.  That was when Charles Kretschmer of Carrollton, Michigan developed and sold the first toasted wheat germ.  Even though wheat germ has been getting a lot of attention lately, it is still considered “the best kept secret” among us fitness/health nuts!

According to the Kretschmer website, wheat germ is “packed with nutrients, protein and fiber” and “is making headlines as one of healthiest foods on the planet”.   That is pretty cool since it tastes soooo amazing! It’s yummy with a nutty flavor and a crunchy texture. It’s a great day when the healthy food you choose to eat also tastes good 🙂

What is wheat germ exactly?

Well, it’s is the part of the wheat that sprouts and grows into a new plant.  It is actually the most vitamin and mineral right part of the whole wheat kernel but is left out when wheat is processed into white flour. Crazy huh? Removing the healthiest part?

So what makes wheat germ so healthy?

Not only is it only 50 calories per serving (2-tbsp serving), but is also packed with loads of nutrients such as:

  • Vitamin E
  • Folic Acid
  • Magnesium
  • Thiamin
  • Phosphorous
  • Zinc
  • And for an added bonus….wheat germ is also high in fiber, in non-animal protein, only contains heart healthy polyunsaturated fat and contains NO sodium!!!

Kretschmer carries three different kinds of wheat germ…they include:

  • Original Toasted Wheat Germ
  • Honey Crunch Wheat Germ
  • Toasted Wheat Bran

I chose to get the Original Toasted Wheat Germ to try mostly because I wanted to be able to use it in a variety of different ways and didn’t want any extra added sweetness that the Honey Crunch has.  I browsed around the Kretschmer website and found tons of recipes that I’m for sure going to try.  Such as:

So far, I’ve added the amazing treat to tons of things!  My smoothies…mixed with almond butter….on my salads….over my fresh fruit….in my Overnight Oats and so on!  Here are a few pics!

I also tried the Double Berry Banana Smoothie (I did tweak it a little to suit my dairy-free life…I used Silk Vanilla Almond Milk instead of low-fat yogurt) but it turned out amazing and very filling!  I definitely recommend trying this one!!    **I totally forgot to take a picture but here is one from the website 🙂


So there it is!  What an amazing product!!  I for sure recommend trying it out (unless you are gluten-free)…there is just too many benefits and different options for trying it to not try it!  Plus it’s great for all types of people….athletes, children, dieters, health-conscious eaters, Pregnant women, seniors….everyone!!!
